Bland potato salad is not under-salted, it is seasoned at the wrong time. A cold, set potato has a sealed surface and will not absorb anything. A warm one, just cut, is porous and takes seasoning straight into the center. Every good potato salad recipe has some version of the same instruction: get vinegar onto the potatoes while they are still warm.

What Your Board Looks Like

Quarter inch dice, destringed with a peeler first. Cut smaller than the potato so it reads as crunch rather than as a separate vegetable.
1/2 red onion

Boiled whole in their skins, cooled just enough to handle, then cut into 3/4 inch pieces while still warm. Skin on or off is a preference, on holds together better.
What this recipe throws away

About a cup and a half: celery bases and strings, onion skin, herb ends, and four eggshells. Eggshell is the difficult one. It shatters into small sharp fragments that scatter across a board and stick to a damp surface, and a fragment that finds its way into the bowl is the one texture failure nobody forgives. Clear the shell off the board completely before the potatoes are cut on it.

Potato Salad

Classic, make-ahead, and better on day two. Makes about 8 cups.

Ingredients

For the potatoes

  • 2 lbwaxy potatoesYukon Gold or red, scrubbed, left whole
  • 2 tbspapple cider vinegarfor the warm potatoes
  • 1 tspfine saltplus more for the cooking water

For the salad

  • 3 mediumcelery stalksdestringed, 1/4 inch dice
  • 1/2 mediumred onionfine dice, rinsed and dried
  • 4hard-boiled eggsroughly chopped
  • 2 tbspchives or dillfinely sliced
  • 1 cupmayonnaise
  • 2 tbspDijon or yellow mustard

Method

  1. Boil the potatoes wholePut them in cold, well salted water, bring to a boil, and simmer for eighteen to twenty-two minutes until a knife slides into the center with no resistance. Whole and skin-on, so they do not waterlog or lose their edges. Starting them in cold water means the outside and center cook at closer to the same rate.
  2. Prep the vegetables while they cookDestring and dice the celery, dice and rinse the onion, and slice the herbs. Twenty minutes of boiling is exactly the amount of time this takes.
  3. Cut warm and season immediatelyDrain the potatoes, let them sit five minutes until you can handle them, then cut into three quarter inch pieces and spread them out. Sprinkle the vinegar and the teaspoon of salt over while they are still steaming. They will absorb it. This is the single most important step in the recipe.
  4. Cool completelyLeave the seasoned potatoes to come to room temperature, about thirty minutes. Adding mayonnaise to hot potatoes makes it split and turn oily, so this wait is not optional.
  5. Fold everything togetherMix the mayonnaise and mustard, then fold in the potatoes, celery, onion, egg, and herbs with a spatula. Fold gently and stop as soon as it is combined. Every extra stir breaks down more potato. Chill for at least an hour before serving.

Make It Ahead

This is a genuinely better dish on day two, and it is one of the few salads where making it the day before is the recommended version rather than a compromise.

Getting It Right

Vinegar on warm potatoes is the whole trick

A warm, freshly cut potato absorbs liquid. A cold one has effectively sealed and will not. Two tablespoons of vinegar and a teaspoon of salt hitting warm potato seasons the inside of every piece, and no amount of dressing added later reaches that far in.

Boil whole, cut after

Cubes boiled loose lose their corners, absorb water, and collapse into the dressing. Whole potatoes hold their structure and you get clean edges when you cut them afterwards. It also means one pot and no fishing around for pieces at different stages of doneness.

Use waxy potatoes

Yukon Gold or red potatoes hold their shape. Russets and other floury baking potatoes disintegrate the moment you fold them, which is how potato salad becomes mashed potato with celery in it.

Let them cool before the mayonnaise

Mayonnaise is an emulsion and heat breaks it. Dressing warm potatoes gives you an oily, separated coating rather than a creamy one. Thirty minutes at room temperature is enough.

Fold, and stop early

Potato salad is over-mixed more often than it is under-mixed. Use a spatula, fold from the bottom, and stop the moment everything is coated. It will look slightly under-mixed and will be correct after an hour in the fridge.
